
Chanel Wine Dinner: Napa Meets Bordeaux
In the heart of Rutherford, under a canopy of trees and late-spring stars, A Celebration of Terroir unfolded at St. Supéry Estate Vineyards & Winery during Auction Napa Valley 2025. Hosted by CEO Emma Swain and Vice President of Winemaking & Vineyards Michael Scholz, this intimate evening brought together French château heritage and Napa Valley terroir in a masterfully choreographed food and wine experience that highlighted the character of each estate.
The evening opened on the winery’s manicured lawn with a reception featuring crisp St. Supéry Sauvignon Blanc and chilled rosé from Domaine de l’Île Porquerolles, served alongside artfully prepared canapés. It set the tone for what would become a rich sensory exploration of place—of soils, climate, and craftsmanship from Rutherford to Saint-Émilion to Margaux.



The Pairings: A Dialogue Between Napa and Bordeaux
The multi-course dinner, presented al fresco in St. Supéry’s serene courtyard, was co-created by Estate Chef Vincent Sanchez and visiting Chef Jean-Baptiste Depons of Château Canon and Château Rauzan-Ségla. Together, they crafted a field-to-fork menu designed to mirror the nuances of each wine and region.
First Course: Sea Bass Crudo
Paper-thin slices of sea bass were elegantly topped with capers, shallots, Parmigiano, and a drizzle of golden Dollarhide Estate olive oil. Paired with the 2023 St. Supéry Dollarhide Estate Vineyard Sauvignon Blanc, the wine’s bright acidity and citrus-driven profile beautifully complemented the crudo’s briny, savory layers.
Second Course: Ricotta Raviolo
A single oversized raviolo filled with creamy ricotta, sweet English peas, and serrano ham was finished with a touch of aged balsamic. The 2009 Château Canon, Premier Grand Cru Classé brought savory depth, earthiness, and red fruit elegance to the dish, while the 2015 St. Supéry Rutherford Estate Vineyard Cabernet Sauvignon offered a plush counterpoint—riper, denser, but beautifully balanced.



Main Course: Barrel Stave Grilled New York Strip
This showstopping course married fire and finesse. The steak, grilled over barrel staves was topped with Mt. Shasta morels and allium soubise. Paired with two contrasting Cabernets—2009 Château Rauzan-Ségla from Margaux, showcasing silky tannins and floral elegance, and the bold 2015 St. Supéry Dollarhide Estate Vineyard Cabernet Sauvignon—this course illuminated how terroir and winemaking style shape expression in the glass.
Final Course: Coral Champagne Cherry Toast
A playful and sophisticated finish, this dish featured Sleeping Beauty peaches, cherry toast, brioche, and a touch of frisée. The pairing—2019 St. Supéry Rutherford Estate Vineyard RU3—brought notes of dried cherry, baking spice, and structure that echoed the dessert’s subtle sweet-savory contrast.
